Good For You Friday: Sweet Potato & Fennel Smoothie

Fall is in the air and this smoothie tastes just like Thanksgiving.  Sweet potatoes are high in fiber, beta-carotene and complex carbohydrates and are known to regulate blood sugar and improve digestion.  Fennel is also good for digestive health and detoxification, while chia seeds are high in omega-2 fatty acids.  This smoothie has a dessert’s texture and taste, but it’s completely guilt-free!

Sweet Potato and Fennel Smoothie:

  • 1 cup coconut water
  • 1/2 sweet potato, roasted; I roast them the night before and refrigerate them
  • 2 cups baby spinach
  • 1 orange, peeled
  • 1/2 fennel bulb
  • 2 dates, pitted
  • 1 tablespoon chia seeds
  • cinnamon, cloves and nutmeg to taste

Add all ingredients in a powerful blender or Vitamix.  Blend until smooth.  Enjoy!
