Good For You Friday: Cucumber Kale Smoothie

Happy Friday!  This smoothie is so refreshing and the apple sweetens it just enough.  Try this tomorrow morning when you are regretting your third glass of champagne from tonight!

Kale Cucumber Smoothie (serves 1)

  • 1/2 cup coconut water
  • 1/2 cup cold water
  • handful ice cubes
  • 1 medium cucumber, peeled and sliced
  • 1 Honey Crisp apple, cored and quartered
  • 1 cup of baby kale leaves or 4 large kale leaves, center removed.
  • 1 celery stalk, coarsely chopped

Combine all ingredients in the order shown above in a powerful blender or a Vitamix and blend until smooth.  Serve immediately.  Enjoy!
